Khandvi (Gujarati dish)

Khandvi is popular snack recipe from Gujarat (a state of India). It is made from besan or gram flour and sour yogurt. And the tempering is added on top at end which takes the dish to another level.

There are two things make this khandvi so tasty. One is the sour yogurt. If your yogurt is not sour then add more lemon juice. And second is the tadka, without tadka khandvi tastes bland.

If making it for first time, you might get fail. But I have mentioned possible tips and tricks in the instructions. Remember practice makes man perfect. Always start with smaller batch. By saying that I do not want to scare you, be brave, read recipe thoroughly and try it. I am sure you will get success.

Ingredients:

Besan (Chickpea flour) – ½ cup

Turmeric powder – ¼ teaspoon

Salt

Red chili powder

Curd half cup

Ginger and green chili paste

Asafetida (Hing) – a pinch

Water

For seasoning:

Oil

Asafetida

Mustard seeds

Dry red chili

Curry leaves

For Garnishing:
Chopped Coriander leaves

Grated fresh coconut.

Preparations:

Step 1

Take besan in a bowl , add water and curd.

Add ginger and green chili paste, Pinch of  turmeric powder, salt as per tatse, pinch of red chili powder.

Mix the batter well into a running consistency.

Step 3

Add batter to the kadhaai  and turn the heat to low. Keep stiring continuously with spatula so batter does not stick to the bottom and it won’t form any lumps. Cook it till it gets thick, it might take approximately 5-6 minutes. Time may vary, it will depend on the gas heat, depend on quantity you are making, depend on the thick or thin bottom pan. Batter has to be thick not falling consistency. You will get to know by experience.

Step 4

Grease the back of the plate with oil as shown in the picture below.

Be quick and spread the batter over the plate using spatula. Let it get cool for a minute then using a knife cut long strips.

Also put grated coconut and chopped coriander

Roll the pieces as shown in the picture below.

Keep the rolls at one side and prepare the seasoning using all the ingredients mentioned above.

Pour the seasoning over the Khandvi.

Just follow this simple recipe and enjoy this mouthwatering chai time snack. Let’s get started.

Ingredients:

Sliced Potatoes

Corn flour powder

Red chili powder

Black pepper powder

Oregano herb

Salt

half tbsp sugar

3 drops of lemon juice.

Preparations:

Step 1

Slice potatoes, the way shown in the picture below.

You can slice them more thin also than I did.

Add cornflour powder, all the spices and the lemon juice to the sliced potatoes

Mix well all the spices and keep it aside for five minutes.

Heat oil in a kadhaai and deep fry potatoes until they become crispy.

Sweet Boondi

This festival season, Prepare prasaad (Offerings for God) at home and surprise your friends and family. All you need to do is follow this quick and simple recipe. So, let’s get started 🙂

Ingredients:

. Gram Flour (1 cup)

. Sugar (One bowl)

. Cardamom powder

. Oil

. Water

Preparations:

Step 1

Take Gram flour and Rava in a bowl, add water to it and mix well until it converts into a running consistency.

Add one tbsp oil to the Gram flour mixture.

Take a container add one bowl sugar and half bowl water, let it boil on a medium flame.

Once it starts boiling add cardamom powder into it.

Let the syrup boil for three minutes on a low flame then turn the stove off.

Step 4

Heat oil in a kadhaai and using steel spatula which has holes on the top, pour the boondi mixture over the oil as shown in the picture below.

Make sure that the oil is moderately hot.

Deep fry the boondis on a low flame until the colour turns golden yellow.

Take out the fried boondis from the kadhaai.

Put the fried boondis into the Sugar syrup.

Let the boondis be in the sugar syrup for five minutes.

Tomato Rice

Ingredients:

Cooked rice

Two Chopped Tomatoes

Garlic paste

Green chili paste

Chopped onion one medium sized

Half tbsp Garam Masala

Half tbsp Dry Coriander Powder

Cumin seeds

Turmeric Powder

Mustard seeds

OIl

Salt

Preparations:

Step 1

Heat oil in a kadhaai add cumin seeds and mustard seeds when they crackle add chopped onion, Ginger and garlic paste. Green chili paste, Garam masala, Dry coriander powder, Pinch of turmeric Powder.

Step 2

Add chopped tomatoes and saute for 5 minutes  on a low flame then add salt.

When tomatoes gets cooked properly, add cooked rice.

Bread Sheera (Sweet Dish)

Ingredients:

Bread, cut into small pieces.

Milk

Raisins

Sugar

Vanilla flavored Custard powder

Ghee

Oil

Preparations:

Step 1

Heat oil in Kadhaai and deep fry bread pieces until they becomes crunchy and then keep them aside.

Step 2

Add one tbsp of ghee in a container and fry raisins and Cashew nuts in it.

Step 3

Add boiled milk to the same kadhaai where we have fried cashew and raisins along with milk and cream in it, then add cardamom powder,, Vanilla flavored custard powder and one small bowl of sugar, let it boil.

Add fried bread pieces to the milk and mash them into the milk mixture properly.

Boil the mixture for few minutes on a low flame until milk becomes thick.
